Remember that not all chocolate is vegan. I use <a href=\"https:\/\/www.amazon.com\/gp\/product\/B07HL7B6PN\/ref=as_li_ss_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B07HL7B6PN&amp;linkCode=as2&amp;tag=cupcakeprojec-20\" target=\"_blank\" rel=\"noopener noreferrer\">Lily&#8217;s Dark Chocolate Baking Bars [paid link]<\/a>, which are vegan.<\/p>\n<p>Instead of eggs, these cupcakes use <strong>soft tofu<\/strong>. The acid from the vinegar activates the baking soda and helps to give the cupcakes their wonderful dome. Like the tofu, you don&#8217;t taste it in the cupcakes.<\/p>\n<h2>Technique<\/h2>\n<p>I highly recommend using a food processor for this recipe to ensure that the tofu is totally smooth. That&#8217;s why I make a ton of it and load the cupcakes up with it &#8211; inside and out! You could do the same thing with fresh mint.
