Read their article to learn all about why this recipe took the crown &#8211; and check out <a href=\"https:\/\/www.thekitchn.com\/chocolate-cupcake-recipe-reviews-23123993\" target=\"_blank\" rel=\"noreferrer noopener noopener noreferrer\">their test of chocolate cupcakes<\/a>, too!<\/p>\n\n\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients\">Ingredients<\/h2>\n\n\n\n<p>There are a few ingredients that set these cupcakes apart:<\/p>\n\n\n\n<ul class=\"wp-block-list\" id=\"block-b9cc17aa-f848-4e3a-94d4-7bd7d06a0b18\">\n<li><strong>A vanilla bean<\/strong>\n<ul class=\"wp-block-list\">\n<li>Using a bean gives the cupcakes a strong vanilla flavor. <em>If you don&#8217;t have a bean, you can leave it it off without adjusting any other ingredients. The recipe will still be amazing, just not as strongly-flavored.<\/em><\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Both butter and oil<\/strong>\n<ul class=\"wp-block-list\">\n<li>Cupcakes that are made with only only oil lack the flavor that butter provides; using only butter, they can end up being too dense and not moist enough. The combination ends up giving a perfect flavor and texture.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Sour cream<\/strong>\n<ul class=\"wp-block-list\">\n<li>Sour cream adds a little extra fat to the recipe and a slight tang. <a href=\"https:\/\/www.cupcakeproject.com\/can-you-use-yogurt-instead-of-sour-cream\/\"><strong>Yogurt works perfectly as a substitute for sour cream<\/strong>.<\/a><\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Cake Flour<\/strong>\n<ul class=\"wp-block-list\">\n<li>Using cake flour instead of all-purpose flour produces a lighter crumb.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-notes\">Notes<\/h3>\n\n\n\n<p><strong>Use any mild vegetable oil for this recipe.<\/strong> I&#8217;ve used canola oil, generic vegetable oil, and safflower oil. While I love using flavored oils in baking, keep in mind that they will change the flavor of the recipe. You can experiment with using non-neutral oils and try baking with pistachio oil, for example, to get a totally different taste.<\/p>\n\n\n\n<p>While I am a huge fan of <a href=\"https:\/\/www.cupcakeproject.com\/why-you-should-buy-vanilla-bean-paste\/\"><strong>vanilla bean paste<\/strong><\/a>, I have not noticed any improvement to the cupcakes when I use it in the batter. <strong>Use normal vanilla extract here<\/strong> and save the expensive paste for your <a href=\"https:\/\/www.cupcakeproject.com\/vanilla-buttercream-frosting\/\"><strong>buttercream<\/strong><\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-it-s-made\">How It&#8217;s Made<\/h2>\n\n\n\n<p class=\"has-light-pink-background-color has-background\"><em>If you&#8217;re a beginner baker, stop here and first take a minute to read my post on <a href=\"https:\/\/www.cupcakeproject.com\/cupcake-baking-tips\/\"><strong>how to make cupcakes<\/strong><\/a>. It covers some of the basics and offers up a lot of tips. If you don&#8217;t have a stand mixer, you can use an electric hand mixer or even mix by hand.<\/p>\n\n\n\n<p class=\"has-light-pink-background-color has-background\"><strong><span class=\"has-inline-color has-red-color\">Tip:<\/span><\/strong> If you don&#8217;t have cake flour, you can substitute all-purpose flour in equal amounts; If you want to use whipped cream frosting, do not frost them until after removing from the freezer; other types of frosting can be frozen right on top of them. You will end up with about twice as many. Set aside.<\/div><\/li><li id=\"wprm-recipe-21315-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">In a medium-sized mixing bowl or bowl of a stand mixer, mix together cake flour, baking powder, baking soda, and salt.<\/div><\/li><li id=\"wprm-recipe-21315-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Add the vanilla bean sugar and mix until well combined.<\/div><\/li><li id=\"wprm-recipe-21315-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Add butter and mix on medium-low speed for three minutes. Because there is so little butter, you&#x27;ll end up with a very fine crumb texture.<\/span><\/div><\/li><li id=\"wprm-recipe-21315-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">In a small mixing bowl, whisk together eggs, sour cream, oil, and vanilla extract until smooth.<\/div><\/li><li id=\"wprm-recipe-21315-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Add the egg mixture to the flour mixture and beat on medium speed until just combined.<\/div><\/li><li id=\"wprm-recipe-21315-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Slowly add milk and mix on low speed until just combined. The batter will be liquid. (Don&#x27;t worry, you didn&#x27;t do anything wrong. It&#x27;s supposed to be that way.)<\/span><\/div><\/li><li id=\"wprm-recipe-21315-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Fill cupcake liners just over 1\/2 full.<\/div><\/li><li id=\"wprm-recipe-21315-step-0-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Bake for 14 minutes and then test to see if they are done. They are done when a toothpick comes out without wet batter stuck to it. The cupcakes should appear white with specks of vanilla bean. They should not turn a golden brown. If they are not done, test again in two minutes. But, you can leave it off and the cupcakes still taste amazing!<\/li>\n<li>Use cake flour for a lighter crumb.<\/li>\n<li>Be careful not to over-mix the batter.<\/li>\n<li>Use room temperature ingredients &#8211; everything will mix together more smoothly that way.<\/li>\n<li>Because everyone&#8217;s oven is just a bit different and your liners may be a slightly different size than mine, I highly recommend that you bake a test cupcake before baking your whole batch of vanilla cupcakes. Fill one liner halfway and see how much it rises during the bake.<\/li>\n<\/ul>\n<span style=\"display: block;\">I keep cooled, frosted cupcakes in large Tupperware-style containers. <em>Food safety experts recommend that cupcakes with whipped cream, buttercream, cream cheese, or ganache frostings should be refrigerated.<\/em> While I always keep cupcakes frosted with whipped cream or ganache in the refrigerator, I often keep my buttercream and cream cheese cupcakes on the counter. Do so at your own risk.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\"><strong>If you know you&#8217;ll need to store your cupcakes for more than 3-4 days, these cupcakes can be frozen without a problem<\/strong>. If you are freezing cupcakes with whipped cream frosting, do not frost them until after removing from the freezer; other types of frosting can be frozen right on the vanilla cupcakes. Also, be sure to store the cupcakes in an airtight container to avoid freezer burn.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">Always return refrigerated or frozen
