This step happens in any recipe that uses gelatin, such as my friend Virginie&#8217;s <a href=\"https:\/\/www.cupcakeproject.com\/pomegranate-tartlets\/\">pomegranate dessert<\/a> and my <a href=\"https:\/\/www.cupcakeproject.com\/greek-yogurt-frosting-healthy-frosting\/\">healthy frosting<\/a> made from yogurt.<\/li>\n\n\n\n<li>Blooming lets the gelatin absorb water and swell a little.
