The name may have come from the pre-Victorian use of the word &#8220;plums&#8221; as a term for raisins or the fact that it used to be more of a stew that contained prunes (more on that later).<\/p>\n\n\n\n<p>It also isn&#8217;t what most Americans would think of as a pudding. American puddings are typically wet and milk-based, like <a href=\"https:\/\/norecipes.com\/best-chocolate-pudding\/\" target=\"_blank\" rel=\"noopener noreferrer noopener noreferrer\">chocolate pudding<\/a>.<\/p>\n\n\n\n<p>A classic British pudding is a savory or sweet dish that&#8217;s boiled or steamed in something. It was traditionally steamed in an intestine and the name comes from the Middle English word &#8220;poding&#8221; &#8211; a &#8220;meat-filled animal stomach.&#8221;<\/p>\n\n\n\n<p>Plum pudding tastes like a <strong>thick, hearty, slightly sweet raisin bread<\/strong>. (Are you surprised? I sure was!)<\/p>\n\n\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-and-equipment\">Ingredients and Equipment<\/h2>\n\n\n\n<p>This plum pudding recipe has a few unique ingredients and some equipment you may not typically use in baking.<\/p>\n\n\n\n<p>To make this properly, you&#8217;ll need <strong>rendered suet<\/strong>. Suet is rendered fat, typically from cow or lamb, and it is widely available through both local butchers and grocery store meat departments &#8211; just ask!<\/p>\n\n\n\n<p>If you prefer a vegetarian alternative, <strong>substitute in an equivalent weight of vegetable shortening<\/strong>.<\/p>\n\n\n\n<p class=\"has-light-pink-background-color has-background\"><strong><span class=\"has-inline-color has-red-color\">Tip:<\/span><\/strong>
<strong>Steer clear of butter when making this recipe<\/strong> &#8211; its lower melting point means that it is likely to melt before the recipe has fully set, resulting in a heavier, greasier dessert.<\/p>\n\n\n\n<p>You&#8217;ll also need 4 ounces of <strong>mashed potatoes<\/strong>; they help give this recipe some bulk.<\/p>\n\n\n\n<p>Though the traditional recipe requires that you boil the pudding in intestines, I recommend a <strong>muslin cloth<\/strong> as the modern alternative.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-it-s-made\">How It&#8217;s Made<\/h2>\n\n\n\n<p>As I mentioned above, traditional puddings are boiled. If you have never made one, the preparation of this recipe will feel very different to you.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-preparing-the-cloth\">Preparing the Cloth<\/h3>\n\n\n\n<p>First, you&#8217;ll have to make your muslin food-safe by soaking it overnight in cold water and then boiling it for 20 minutes. Rinse it in cold water and hang it in a clean room to dry before you mix up the batter.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-preparing-the-batter\">Preparing the Batter<\/h3>\n\n\n\n<p>Grate the solid suet into a bowl using a grater that&#8217;s been floured.<\/p>\n\n\n\n<p>Fill a large pot 3\/4 of the way full of water, cover, and set on the stove to boil.<\/p>\n\n\n\n<p>While that&#8217;s coming to a boil, combine flour, sugar, nutmeg, ginger, cloves, and salt in a large bowl. Rub the grated suet into the dry ingredients until only pea-sized pieces (or smaller) remain.<\/p>\n\n\n\n<p>Add mashed potato into the dry ingredients and mix until thoroughly combined. Then, add the raisins and currants and mix until evenly distributed.<\/p>\n\n\n\n<p>In another bowl, beat the eggs until smooth, and then stir milk into the beaten eggs. Add these wet ingredients (the milk and egg mixture) to the batter and mix thoroughly.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-cooking\">Cooking<\/h3>\n\n\n\n<p>Submerge your prepared cloth in the pot of boiling water. Wearing heavy rubber gloves, remove the cloth from the water and wring out any excess moisture.<\/p>\n\n\n\n<p>Lay the cloth flat on a clean countertop and liberally sprinkle the center (where you will place the batter) with flour. Rub flour across the cloth, ensuring that a circle of at least 16 inches in diameter is coated with flour, and that the flour layer is slightly thicker at the center.<\/p>\n\n\n\n<p>Place the batter on the floured cloth. Gather the cloth up around the mixture and, tightly cinch the cloth as close to the mixture as possible using kitchen twine. Knot the corners together for a more secure seal.<\/p>\n\n\n\n<p>Lower the cloth into the boiling water and cover the pot. Boil the pudding for four hours, replenishing the water as necessary.<\/p>\n\n\n\n<p>When it&#8217;s done, lift the cloth out of the water and place it in a colander. Cut the string, open the cloth, and turn the dessert out onto a plate to cool. Let sit for at least 20 minutes before serving.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-expert-tips-and-faqs\">Expert Tips and FAQs<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-plum-pudding-history\">Plum Pudding History<\/h3>\n\n\n\n<p>Plum pudding began life as plum pottage, or stew, in the 15<sup>th<\/sup> century.<\/p>\n\n\n\n<p><strong>Originally a rich stew<\/strong>, English Christmas pudding was made from chopped beef or mutton, onions, root vegetables, and a variety of dried fruits. It was thickened with bread crumbs, flavored with wine and spices, and served at the beginning of a meal.<\/p>\n\n\n\n<p>Over time, the meat and vegetables began to drop out of the pottage, and, in the 16<sup>th<\/sup> century, it was among many common pottages to be adapted into baked or boiled puddings. Suet and sugar found their way into the batter, which was then tied in a floured cloth and boiled for several hours to produce a spherical pudding. <strong>Dickens described it as a &#8220;speckled cannon-ball&#8221;<\/strong>&nbsp;in <span style=\"text-decoration: underline;\">A Christmas Carol<\/span>.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p><em>Hallo! A great deal of steam! The pudding was out of the copper. A smell like a washing-day! That was the cloth. A smell like an eating-house and a pastrycook&#8217;s next door to each other, with a laundress&#8217;s next door to that! That was the pudding&#8230;. like a speckled cannon-ball, so hard and firm, blazing in half of half-a-quartern of ignited brandy, and bedight with Christmas holly stuck into the top.<\/em><\/p>\n<cite>Charles Dickens, <em>A Christmas Carol<\/em>, chapter 3<\/cite><\/blockquote>\n\n\n\n<p>Over time, the cultural significance of plum pudding changed along with its form. Pottages were everyday dishes, but <strong>plum pottage&#8217;s rich ingredients (meat, exotic dried fruits, and spices available only to the wealthy) made it a natural addition to menus for special occasions<\/strong>. Plum pottage and pudding have been associated with both Christmas and with Winter Solstice, and rituals of making and serving the pudding have been variously attributed to Christian and pagan traditions.<\/p>\n\n\n\n<p>Folding lucky charms (actual charms rather than the cereal) into the batter &#8211; almost like the baby in a king cake &#8211; and serving the pudding wreathed in flames (said to represent the sun&#8217;s rebirth) are practices linked to Winter Solstice, while the tradition of making it on the Third Sunday of Advent, or &#8220;Stir-up Sunday&#8221; (so called because the day&#8217;s collect in <em>The Book of Common Prayer<\/em> reads, &#8220;Stir up, oh Lord, the wills of thy faithful people&#8221;) is a Christian addition.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-the-origin-of-english-christmas-pudding\">The Origin of English Christmas Pudding<\/h3>\n\n\n\n<p>Plum pudding&#8217;s ambiguous associations led it to be banned for a time as a pagan decadence in Oliver Cromwell&#8217;s England, and <strong>it wasn&#8217;t until the 19<sup>th<\/sup> century that &#8220;plum pudding&#8221; made the definitive shift to &#8220;English Christmas pudding.&#8221;<\/strong><\/p>\n\n\n\n<p><em>The Oxford English Dictionary<\/em> credits Anthony Trollope with pioneering the term &#8220;Christmas pudding&#8221; in his 1858 novel <em>Dr. Thorne<\/em>, but it was actually poet and cook Eliza Acton who first used the term &#8211; a whole thirteen years before Trollope.<\/p>\n\n\n\n<p>Nestled in Acton&#8217;s 1845 cookbook <em>Modern Cookery, in all its Branches: Reduced to a System of Easy Practice for the Use of Private Families<\/em> is a distinctly plum-pudding-like dessert called &#8220;Cottage Christmas Pudding.&#8221; This recipe represents not only the first traditional Christmas pudding to be identified as such, but also a revolution in cookbook publishing.<\/p>\n\n\n\n<p>Acton had the novel idea for the period that published recipes would be more useful if they contained things like ingredient lists, measurements, and cook times; as a result, her cookbook reads much like a modern publication.<\/p>\n\n\n\n<p>I&#8217;ve included a slightly updated version of Acton&#8217;s recipe for English Christmas pudding here, but if you&#8217;d like to view the original in context, the second edition of <em>Modern Cookery<\/em> is freely available through <a href=\"https:\/\/archive.org\/details\/moderncookeryin00actogoog\" target=\"_blank\" rel=\"noopener noreferrer\">Internet Archive<\/a>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-faqs\">FAQs<\/h3>\n\n\n\n<div class=\"schema-faq wp-block-yoast-faq-block\"><div class=\"schema-faq-section\" id=\"faq-question-1604087965776\"><strong class=\"schema-faq-question\">Where can I buy beef suet?<\/strong>
