I typically use <a href=\"https:\/\/www.penzeys.com\/online-catalog\/natural-cocoa-powder\/c-24\/p-913\/pd-s\" target=\"_blank\" rel=\"noopener noreferrer\">Pensey&#8217;s natural cocoa powder<\/a> in these cookies and it comes out great. Try using any cocoa powder that you love &#8211; even one that&#8217;s been <a href=\"https:\/\/en.wikipedia.org\/wiki\/Dutch_process_chocolate\" target=\"_blank\" rel=\"noopener noreferrer noopener noreferrer\">Dutched<\/a>.<\/p>\n\n\n\n<p class=\"has-light-pink-background-color has-background\"><strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-red-color\">Tip:<\/mark><\/strong> For true chocoholics, I recommend using your favorite dark chocolate chips or chunks when making this recipe. Then, add these dry ingredients to the wet ingredients a little bit at a time.<\/p>\n\n\n\n<p>Stir in chocolate chips or chocolate chunks. Even if you used an electric mixer to make the rest of the batter, <em>do this part by hand<\/em>. It keeps you from over-mixing the batter.<\/p>\n\n\n\n<p>Put tablespoon-sized scoops of cookie batter onto a cookie sheet lined with parchment paper or a silicone mat. <em>Make sure to leave lots of space between the cookie dough balls<\/em> because they will spread. I put six cookies on each cookie sheet.<\/p>\n\n\n\n<p>Don&#8217;t put them in the oven yet. The secret to making these cookies look pretty when then come out of the oven is to slightly flatten the top of each cookie dough scoop and then <strong>press more chocolate chips right into the top of each unbaked cookie<\/strong>. That way, when they emerge from the oven, you know there will be chips visible on the top. Bring to room temperature before eating (or warm in the microwave for a few seconds).<br\/><br\/>Freeze for several months in a freezer-safe container. Separate layers of cookies with parchment paper so they don&#8217;t stick together &#8211; that way you can grab a couple at a time when you want a snack!<\/p>
