(I explain a little about why it is important to measure liquids this way and solids with solid measuring cups in my posts about <a href=\"https:\/\/www.cupcakeproject.com\/baking-tools\/\">baking tools<\/a> and <a href=\"https:\/\/www.cupcakeproject.com\/how-much-does-a-cup-of-flour-weigh\/\">how much a cup of flour weighs<\/a>.)<\/p>\n<p>When honey sits for a long time, it gets crystallized and may be difficult to remove from its jar. <strong>To remove the crystals and to make it easier to pour and measure the honey, take the lid off of your glass jar and microwave it for ten seconds at a time until it is smooth<\/strong>. If your honey is in a non-microwaveable container or if you don&#8217;t own a microwave, rest your sealed honey container in warm water for 15 minutes.<\/p>\n<p>Make sure that you get all of the honey out of your measuring cup. To do so, you can <strong>grease the measuring cup with a non-stick spray before adding the honey<\/strong> to it or, if the recipe calls for oil, measure the oil first using the same measuring cup you&#8217;ll later use for the honey.<\/p>\n<h2>What Type of Honey is Best for Baking?<\/h2>\n<p>Depending on what bees are eating, honey can take on all different flavors and even colors. (Did you catch the story about <a title=\"Colored Honey\" href=\"https:\/\/www.nationalgeographic.com\/news\/2012\/10\/121011-blue-honey-honeybees-animals-science\/\" target=\"_blank\" rel=\"noopener noreferrer noopener noreferrer\">bees feeding on remnants of colored M&amp;M candy shells<\/a>?) I was reminded of this during a recent trip to Florida where I did a honey tasting offered by a company called <a title=\"Keez Beez\" href=\"https:\/\/www.keezbeez.com\/product-page\/mamey-raw-honey\" target=\"_blank\" rel=\"noopener noreferrer noopener noreferrer\">Keez Bees<\/a>. Each honey tasted dramatically different than the next. Their <a title=\"mamey\" href=\"https:\/\/en.wikipedia.org\/wiki\/Pouteria_sapota\" target=\"_blank\" rel=\"noopener noreferrer noopener noreferrer\">mamey<\/a> honey was the most distinctive, with a chocolaty flavor derived from the bees feeding on that unique fruit.<\/p>\n<p><strong>With such an array of honey options, surely choosing the right honey would matter tremendously in baking, wouldn&#8217;t it?<\/strong> I set out to find out.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-cp-image-h wp-image-18785\" src=\"https:\/\/cdn.cupcakeproject.com\/wp-content\/uploads\/2015\/01\/Honey-04-636x424.jpg\" alt=\"Honey Cookie Tasting\" width=\"636\" height=\"424\" srcset=\"https:\/\/cdn.cupcakeproject.com\/wp-content\/uploads\/2015\/01\/Honey-04-636x424.jpg 636w, https:\/\/cdn.cupcakeproject.com\/wp-content\/uploads\/2015\/01\/Honey-04-300x200.jpg 300w, https:\/\/cdn.cupcakeproject.com\/wp-content\/uploads\/2015\/01\/Honey-04-768x512.jpg 768w, https:\/\/cdn.cupcakeproject.com\/wp-content\/uploads\/2015\/01\/Honey-04-122x81.jpg 122w, https:\/\/cdn.cupcakeproject.com\/wp-content\/uploads\/2015\/01\/Honey-04-318x212.jpg 318w, https:\/\/cdn.cupcakeproject.com\/wp-content\/uploads\/2015\/01\/Honey-04-428x285.jpg 428w, https:\/\/cdn.cupcakeproject.com\/wp-content\/uploads\/2015\/01\/Honey-04-214x143.jpg 214w, https:\/\/cdn.cupcakeproject.com\/wp-content\/uploads\/2015\/01\/Honey-04-150x100.jpg 150w, https:\/\/cdn.cupcakeproject.com\/wp-content\/uploads\/2015\/01\/Honey-04.jpg 852w\" sizes=\"auto, (max-width: 949px) calc((100vw - 40px) \/ 1.5), (max-width: 1280px) calc((100vw - 360px) \/ 1.5), 100vw\" \/><\/a><\/p>\n<p>To conduct my test, I did the following:<\/p>\n<ul>\n<li>I selected four honeys that tasted very different from each other.<\/li>\n<li>I baked some simple <a title=\"Simple Honey Cut-Out Cookies\" href=\"https:\/\/www.cupcakeproject.com\/honey-cookies\/\">honey cookies<\/a> four times, once with each honey. I made sure that honey was the predominant flavor of the cookie; the recipe has no other sugars and has no additional spices or flavors aside from a little vanilla extract.<\/li>\n<li>My husband, the <a title=\"St. Louis Wedding Photographer\" href=\"https:\/\/www.jpollackphoto.com\/\" target=\"_blank\" rel=\"noopener noreferrer noopener noreferrer\">professional photographer<\/a> for this site, gave me a blind cookie taste test and I gave the test to other willing subjects.<\/li>\n<\/ul>\n<p>My subjects kept asking if I was tricking them: &#8220;Are these all the same cookie?&#8221; I could taste no difference between the cookies baked with different honeys and neither could my tasters. I was surprised by this result because I&#8217;ve done similar tests with chocolate brands and there was a dramatic difference in taste. Clearly, honey is a more subtle flavor.<\/p>\n<p><strong>I would not suggest using your favorite specialty honey for baking with honey. It&#8217;s not worth it since you will most likely not be able to detect the honey&#8217;s subtleties in the end product.<\/strong><\/p>\n<p><em>The best time to use a specialty honey is in a honey drizzle that goes on after the bake<\/em> because you will be tasting that honey all on its own and the different flavor will come through more.<\/p>\n<p>Although any honey will do for baking, <strong>I always recommend buying local honey.<\/strong> Doing so may help with allergies, and there are many other <a href=\"https:\/\/www.queenandcolony.com\/blog\/2019\/1\/28\/-benefits-of-local-raw-honey\" target=\"_blank\" rel=\"noopener noreferrer noopener noreferrer\">reasons to purchase local honey<\/a>, too.<\/p>\n<p>Lastly, it doesn&#8217;t pay to buy raw honey for baking.
