Don’t go for the cheap waffle cone makers, you will be disappointed. Many of them cook unevenly. Some have very small diameter cone molds. I did a lot of research and read a lot of reviews on different waffle cone makers. Chef’s Choice is the brand I finally went with. It’s a little more expensive (around $50), but if you shop around you can get a decent deal. For me it was worth it. I have a couple of people in our family who are gluten intolerant and I want to make sure they don’t miss out on anything if I can help it. Homemade “ice cream shop” quality cones is another way to make sure the ones I love don’t feel left out.

I used a really simple fortune cookie type recipe, and experimented with 2 different cooking methods: baking and pan frying [like a pancake or crepe]. The baked cones were better for ice cream, but it was completely impossible to get more than 1 or 2 cones per sheet pan since they set so quickly. The pan ones had little air pockets all over, which made the ice cream seep through in some places, but tasted better in my opinion. Neither had the waffle texture though, so I’ve been on the lookout for an inexpensive waffle cone maker. I love the mini ones! Now at least I have a place to start looking :)
