I’ve been baking more with honey over the past 6 months or so to try and cut out as much processed sugar as possible. This was very helpful as I’d been wondering if using different types of honey would affect the overall taste and texture. I try to always buy local honey, simply because I feel it has the best taste – I find it’s generally a bit stronger than supermarket honey and more flavourful.

My cookies are crispy cookies so I didn’t really want them to be moist. But, generally, yes, honey will make desserts quite moist. There are plenty of places to buy local honey outside of farmer’s market. Have you been to local harvest grocery?
