I made a lemon chiffon cake practically the same recipe except it had lemon zest and juice rather than. The pumpkin purée. Regrettably even after following the directions to the letter my lovely chiffon cake was by no means light and airy. It tasted great but the cake was kind of dense. I didn’t beat egg whites too hard at all, I just wonder if there are any tips to avoid a regular cake when a light chiffon is desired?
