Thank you for this recipe! Yesterday I tried to adapt one of my lemon curd recipes into a carrot curd and it failed miserably. And I thought I can’t be the only one who thinks this sounds good, lol!

I loved this dish and so did my family. Wanted to increase the healthy factor up a few notches, so I used a heaping teaspoon of ginger and added lemon juice and lemon zest. Really good. Thank you for sharing.
