I came back to set the record straight. I tried cooking this curd over a double-boiler, and it did not thicken. I recooked it over direct heat, and it thickened withinin a few minutes! Moral of the story: do not use a double-boiler.
I added a splash of lemon juice to tone down the sweetness. It’s better but I will use less sugar next time.

I used large eggs and cooked it to 175 degrees. I thought my thermometer might not be calibrated correctly, but it registered 212 in boiling water. The only thing I did differently was cooking it in a double-boiler; that shouldn’t matter since the mixture was heated to 175. I also found this to be far too sweet but really enjoyed the flavor addition of the rum. Good idea!

I made this last night. It is DELICIOUS! I could not stop sampling it warm and it is just as good cold. I am thinking peanut butter and banana curd sandwich? Base for banana cream pie filling? Spread on chocolate graham crackers? The possibilities are endless! Thanks for a great recipe!
