I’ve never actually thought about the benefits of slicing zest versus grating it, but it makes perfect sense! I’ll confess to using a zester: it’s fast and easy and yes, i like the smell. I’ve done this before, but only when a recipe calls for actual strips of zest: now i feel like i should take the time to do things this way to get the most from my citrus. Great post!
