These are simple and yummy with a the distinct honey flavor I was looking for (and was having trouble finding with all the “honey cookie” recipes out there sweetened mostly with white sugar).
They also take well to swapping out the vanilla extract with another honey-complimenting flavoring you may like for the 2nd flavor note (I tried orange blossom water to good effect, but I expect almond and other extracts would be interesting as long as they aren’t used in quantities that would overpower the honey)

I do have to give 1 significant warning, though, on something one of the tips way understates: I found them essentially impossible to cut out at room temp and they warmed quickly. Leave yourself extra time to rechill the dough after every single time you roll it out to make cutting out your cookies easier. Chilling the dough before rolling it is unnecessary if you roll it between 2 sheets of parchment, however.
