I had the same problem. I’m pretty sure my egg whites split as soon as I added the butter. I didn’t whisk them that long and though the sugar *looked* dissolved I had barely added any heat. That being said, the cottage cheese looking frosting is still delicious. I paired with the dark chocolate cupcakes. It’s a little too rich for me over all but my partner will love it.

But the frosting never came together. I thought the emulsion might come together when I added the mascarpone and powdered sugar, but it didn’t. I had to add a lot more butter and powdered sugar before it finally turned into frosting, and then it was heavy and sweet and not at all but I was hoping for. But, I will try again! I have some hypotheses about where I went wrong.
